1 Liter Milk; Soak
12 Eggs; Separated
12 Gramm Sugar; Cream
12 Gramm Butter; Unsalted
2 Gramm Vanilla
1 Esslöffel Baking Soda
1 Esslöffel Salt
2 Teelöffel Cinnamon
1 Lemon; Juice & grated Rind
12 Gramm Almonds, toasted; Finely Grou
6 Kilo Fresh or Frozen Pie Cherries; Pitted
2 Gramm Bread Flour; Dust Cherries
1 Tasse (250ml) Cake Crumbs; For the Pan
2 Gramm Butter; For the Pan
4 Gramm 10 X Sugar; For Dusting

Zubereitung:
. Soak the Danish Crumbs in warm Milk.
Cream the Butter, Sugar, Vanilla, Almonds, Cinnamon, Lemon Juice, Rind an=
d

warmed Eggyolks.
Whip the Whites and fold in with the dusted Pie Cherries.
Butter shallow 200 pan and sprinkle with cake crumbs.
Pour in Batter and bake at 325F for 45 minutes to one hour.
Dust with 10 X Sugar and serve warm with Caramel-Cherry Sauce or Creme a
l'Anglaise.
