3 Kilo Round eye beef
1 Orange carrot
1 Yellow carrot
1 Celery root
1 Leek
1 Parsley root
  APPLE HORSERADISH SAUCE
3 (-4) Apples
0.5 Lemon; the juice
3 Esslöffel Horseradish; finely grated
1 Teelöffel Vinegar
  Sugar
  Salt

Zubereitung:
. Tafelspitz: Bring water to a rolling boil in a pot large enough to
fully submerge beef. Put beef and the above ingredients (thoroughly
cleaned, but whole) into the boiling water. Simmer 1-1/2 hours until
done. Remove and cut against beef fibers.

Apple Horseradish Sauce: Sprinkle peeled apple quarters with lemon
juice. Bake at 350 degrees about 25 minutes until soft. Puree soft
apples with horseradish and vinegar. Add sugar and salt to taste.
